La cuisine des Langhe est bien connue des professionnels et des passionn\u00e9s, et tr\u00e8s appr\u00e9ci\u00e9e par tous ceux qui ont eu la chance de la d\u00e9couvrir.<\/span><\/p>\n

Notre cuisine se distingue par la saisonnalit\u00e9 des mati\u00e8res premi\u00e8res, par la vari\u00e9t\u00e9 des herbes sauvages, tout aussi diversifi\u00e9es que les terres des r\u00e9gions composant ce territoire. Ces ingr\u00e9dients sont savamment travaill\u00e9s gr\u00e2ce \u00e0 des si\u00e8cles d’exp\u00e9rience, chaque famille ayant apport\u00e9 ses variations qui rendent cette cuisine unique<\/span>.<\/span><\/p>\n

Comme toutes les cuisines traditionnelles, elle est n\u00e9e des produits locaux les plus modestes, qui poussaient spontan\u00e9ment dans les bois, mais aussi dans les prairies ou les champs en jach\u00e8re, ne n\u00e9cessitant donc aucun co\u00fbt d’achat. Elle tire son essence de la cr\u00e9ativit\u00e9 et de \u00ab l\u2019art de lla d\u00e9brouille\u00a0\u00bb des femmes, qui devaient nourrir de nombreuses personnes… parfois avec un coup de pouce du hasard.<\/span><\/p>\n

Autrefois, la recherche de champignons ou de truffes, la cueillette de fruits sauvages, ou la qu\u00eate d’herbes comestibles \u00e9taient des \u00ab passions \u00bb ou des \u00ab passe-temps \u00bb partag\u00e9s aussi bien par les hommes que par les femmes. Chacun avait ses propres \u00ab sites \u00bb jalousement gard\u00e9s secrets. Ces activit\u00e9s, presque toujours, empi\u00e9taient sur les heures de sommeil plut\u00f4t que sur celles d\u00e9di\u00e9es au travail.<\/span><\/p>\n

\u00c0 l’\u00e9poque, les fruits de ces recherches \u00e9taient rarement vendus, sauf en cas d\u2019abondance exceptionnelle. Chaque \u00ab chercheur \u00bb, r\u00e9servait ses trouvailles \u00e0 sa famille. Ainsi, notre cuisine regorge de recettes \u00e0 base de c\u00e8pes et d\u2019amanites des c\u00e9sars, de d\u00e9licieuses confitures de fruits sauvages. Les truffes, quelle que soit la saison, \u00e9taient un compl\u00e9ment unique aux plats de saison.<\/span><\/p>\n

Les rivalit\u00e9s et des ruses qui surgissaient dans ce contexte donnaient lieu \u00e0 des situations et des anecdotes parfois hilarantes . J\u2019ai demand\u00e9 \u00e0 Marinella Bera de nous en raconter quelques-unes, accompagn\u00e9es bien s\u00fbr des anciennes recettes.<\/span><\/p>\n
